Hello, today I just have to share one of my new favorite breakfasts, Greek Yogurt with Quinoa Crunch and Berries. Once you mix this stuff up it is so easy to grab breakfast really fast (which is great with kids, my boys eat and are ready to play so I have to hurry).
FOR THE QUINOA CRUNCH
1 cup quinoa
1/4 cup flaxseed
1 T olive oil
1. Mix all ingredients together. 2. Spread on a baking sheet and bake at 375 deg. F oven until lightly browned. (You might stir every 10 minutes for about 25 - 30 minutes.)
3. Let cool, crumble.
Serving Size 2T.

Place 1/2c. Plain Greek Yogurt in a small serving bowl with a 1/2c. of your favorite berries, then top with 2 T. Quinoa Crunch and drizzle with 1/2t. honey.
